Ingredients
5 large potatoes, peeled and diced
1 onion, chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream
1/2 cup sour cream
4 slices bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
Salt and pepper to taste
Chopped chives for garnish
Preparation
In a large pot, sauté the onion and garlic until translucent.
Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
Using an immersion blender, blend the soup until smooth. You can also blend half of the soup if you prefer some chunks.
Stir in the heavy cream and sour cream. Heat through but do not boil.
Season with salt and pepper to taste.
Serve hot, garnished with bacon, cheddar cheese, and chives.
